The Recipe is as follows:
1. Start with 4 white potatoes
2. Cut potatoes into quarters and boil with 2 eggs 35-40 minutes
3. Allow eggs to cool in a separate bowl
4. drain potatoes and mash
5. Add 3 tablespoons of sweet relish
6. ½ teaspoon of yellow mustard,
7. 1 teaspoon of sugar (optional)
8. 4 tablespoons of mayonnaise and mix well
9. Add slice boiled eggs on top of mixture
10.Sprinkle lightly with paprika and Enjoy
1. Benefits of Potatoes
Did you know that potatoes are rich in fiber? WebMD.com further adds that the fiber in potatoes called “resistant starch” causes less gas than other types of fiber and you can feel free to reheat them before you eat. That is good to know. How do you like your potatoes? I love baked potatoes, mashed potatoes, and french-fries as well.
2. Vitamins
According to Heathline.com Potatoes are packed with nutrients including calories 161, fat 0.2 grams, protein 4.3 grams, carbs 36.6 grams, fiber 3.8 grams, Vitamin C 28% of the RDI (Recommended Dietary Intake), Vitamin B6 27% of the Recommended Dietary Intake, Potassium 26% of the Recommended Dietary Intake, Magnesium 12 % of the Recommended Dietary Intake, Phosphorus 12% of the Recommended Dietary Intake, Niacin 12% of the Recommended Dietary Intake, and Folate 12% of the Recommended Dietary Intake.
Wow! That is a lot of nutrients. The good thing about potatoes is that there are so many different ways to cook them.
3. Sweet Potatoes
You cannot forget the sweet potatoes. This is one of my favorites. I love candid yams and created an idea pin for it shown below.
The Candid Yams recipe is as follows:
Note:
Yams are much sweeter than sweet potatoes so it may be a matter of preference
a. Preheat oven to 350 degrees
b. Peel 2 sweet potatoes or yams and cut them like french-fries
c. Put the cut potatoes in a bowl of water
d. place a small hand full of potatoes in a greases casserole bowl
I usually grease my casserole bowl with margarine
e. sprinkle lightly with nutmeg
f. Dote sliced sweet potatoes with margarine
g. Add 2 Tablespoons of brown sugar
h. repeat this process until potatoes are all used and casserole bowl is full
i. Then pour the entire small bottle of vanilla extract over the sweet potato mixture
j. Cover with aluminum foil and bake 2 ½ hours or until done.
J. Enjoy your finished dish.
I definitely love baked sweet potatoes as well.
4. Benefits of Sweet Potatoes
Beside the fact that sweet potatoes provide 25% of the daily value of manganese, 20% of the daily value of copper, and 12% of the daily value of potassium, sweet potatoes have beta-carotene which converts to vitamin A and helps prevent dry eyes and keep you seeing well in the dark, sweet potatoes promote healthy skin and hair, they support your immune system, and help you maintain a healthy weight. The manual.com further adds that antioxidants in sweet potatoes help prevent age-related declines in brain function so they can keep you sharper longer. That is good to know.
5. Superfood
The question has been asked is a sweet potato really a super-food? According to healthyscienceacademy.org., because the sweet potato is loaded with minerals and A,B,and C vitamins it has led the sweet potato to being called a Superfood by many. I am not surprised and I can definitely see why. Another thing that I like about the sweet potato is that the price for them have been reasonable despite the rising prices of foods. I recall not too long ago they were on sale for .25 cents a pound. You cannot beat that.
This brings to remembrance of the traditional Sweet Potato pie usually served on Thanksgiving Day and on Christmas Day. I recall my aunt always making several sweet potato pies. One was just not enough.
6. Potatoes Everyday
Is it OK to eat potatoes everyday? Well according to today.com eating one medium-size potato a day can be part of a healthy.diet and doesn’t increase cardio metabolic risk- the changes of having diabetes, heart disease or stroke- as long a the potato is steamed or baked, and prepared without adding too much salt or saturated fat. I do have a baked potatoe with breakfast. It is so good. I recall when attending therapy exercise sessions with a relative as I talked with one of the trainers one of the participants added to my conversation that she loved her salt. While salt seasons the food too much salt can be detrimental to your body.
7. To Peel or Not to Peel
That is the question. Do you eat the peel with your french-fry? What about ordering potatoes when at a restaurant that has the peels on the potatoes? According to tastingtable.com the potato’s flesh contains the bulk of the carbs, and mineral, vitamins, and fiber is where the peel shines. They further add that 100 grams of potato skin has 17 times more iron and seven times more calcium than the same amount of flesh- elements vital for boosting your immune system and neural health; it provides 66% of your daily B6 requirements and 31% of vitamin C, and the skin also contains upwards of 10 times the amount of antioxidants as the flesh. Wow! I just learned something new. That is something to think about.
So the next time you eat potatoes decide whether it will be with or without the peel.
