Awesome Shrimp and Vegetable Dish

Do you have a favorite dish that you love? I have several dishes that I really like. I would like to share one with you that is very nutritious. I just could not keep this to myself.


My Favorite 

Green Vegetables


Here is the idea pin that I created for this dish. It shows the pictures of how to make this wonderful dish.


Shrimp and Vegetable Dish



1. Slice a green zucchini squash

2. Slice a yellow squash

3. Slice 1 smoked Eckrich sausage

4. Slice a sweet Bell Pepper

5. In a Large skillet add large devine peel shrimp with the tail off, then layer the shrimp, squash, sausage and bell pepper in the skillet. Cook for 25-30 minutes or until done. For you Cajun lovers you might want to season with Cajun pepper. I just use regular pepper and no salt. I like this dish because it is fast, easy, and simple.


1. Water

You might ask what about adding water?  No water is needed because zucchini squash is loaded with water. According to ontarioequestrian.ca zucchinni contains over ninety percent of water. Isen’t that great. Webmd.com also states that zucchini is rich in vitamin B6 and can help with regulating blood glucose. They further add that zucchini is a wonderful source of folate, potassium, and vitamin A.


I might add that I never liked fried squash, but I like the squash and zucchini in this dish. You can barely taste it. Also the first time I experienced zucchini was in a bread dish.  It was just awesome. A mother from our church gave it to me for Christmas. She told me, “I did not know what to get you, because you have everything.” Little did she know I did not have everything. That zucchini bread was the best I have ever tasted. I also have made the bread since then because mother Stone is deceased. So the zucchini bread will be a future article. Even though she is deceased the memories from eating her bread will live on and on.


2. The Rainbow

Have you heard the expression “eat the rainbow?” Well in this recipe you are getting several colors from the rainbow. Did you know that squash with it’s brightly colors is high in vitamins A, B6, and C, folate, magnesium, fiber, riboflavin, phosphorus, and potassium? They further add that the yellow squash is rich in manganese a mineral that helps to boost bone strength and helps your body’s ability to process fats and carbohydrates. So this receipt is a win/win recipe you get the colors of the rainbow and a super pack of vitamins and minerals in one dish. Isen’t that awesome? I would say that is eating smarter not harder. If you would have told me earlier in life that I would be eating zucchini and squash together I would have told you “no way.”


3. What About Shrimp?

Shrimp is noted in this recipe. What about Shrimp? Did you know that there are 99 calories, 0.3 grams of fat, 0.2 grams of carbs, 189 milligrams of cholesterol, 111 milligrams of sodium, and 24 grams of protein in Shrimp, phosphorus, copper, zinc, magnesium, calcium, potassium, and iron ? Yes that is according to Web. Md.com. They further add if you are trying to loose weight they’re low carbs and calories but one potential concern is the high amount of cholesterol in shrimp; eating too many is bad for the heart so remember moderation.


4. Red Bell Pepper

Red Bell Peppers are high in vitamin C, Vitamin A, Vitamin B6, Folate, Vitamin E, Fiber, and an excellent source of antioxidants. This is all stated by medicalnews.com. They further add that the Arthritis Foundation stated bell peppers may help to reduce the risk of developing some types of arthritis and other inflammatory health conditions due to two factor; the beta-cryptoxanthin and high vitamin C Content.


5. Eating Healthy

When you know better, you do better. Everyday there is new information about the importance of eating healthy. According to cdc.gov eating healthy may help you live longer, keeps skin, teeth, and eyes healthy, support muscles, boosts immunity, strengthens bones, lower risk of heart disease, type 2 diabetes, help the digestive system function, and help achieve and maintain a healthy weight. Knowing this wouldn't you like to even try and make it a goal to eat healthy because your life seemingly depends on it?


6. Do You Struggle to Eat Healthy?

Do you struggle with eating healthy? Does eating healthy sound more like a chore to you? Poor food choices despite knowing better can relate to a common modern problem of low self-worth according to harleytherapy.co.uk. She further adds that many use food as a reward system without even realizing it. She suggest asking yourself the question are you eating to fuel your body or because you want to reward yourself, did you learn as a child that food was a way to reward yourself, or possibly what is a nicer way to reward yourself instead of using food?


These are great questions to think about because I remember growing up and my closes friend shared with me that she ate food for comfort, but felt bad after she ate it. I share with her that growing up when I was upset or feeling bad I was the opposite I could not eat. There seemingly was a bad or different tasted in my mouth and food did not even taste good. Isen’t that something how 2 people can have different relationships with the food that they eat? It was not until at a later age I realized food is and can be pleasurable. What is your take on food? Do you eat to fuel your body or is there another hidden agenda? Possibly you eat to fuel your body and you eat for pleasure.
